dinner for two… sausage bolognese

most nights my 5 year old son and i eat by ourselves. he likes pasta and icecream. so on nights i don’t feel like force feeding him something else, i try to change up the pasta a bit while adding something halfway decent in it for us. peas, spinach, carrots… tonight it was carrots.

i didn’t really follow a recipe, just kinda skimmed several online and came up with something. i use this sausage for EVERYTHING and after seeing the link i just gave you, i probably won’t use it anymore…but i suggest you use it just this once. 😉

my pork sausage bolognese: (approx. measurements)

  • chopped onions, handful
  • large carrot, peeled and roughly chopped
  • garlic, grated
  • 1/2 lb. ground pork sausage
  • 1T. tomato paste
  • 1/2 c. broth (i used chicken)
  • 14oz of diced tomato
  • 1/3 c. milk
  • s&p

-drizzle some olive oil in a pan and turn to medium low heat. once hot add a handful of chopped onion, a large chopped carrot and a grated garlic clove.

-when the onions are soft add a half pound of the ground sausage and cook fully. drain any access grease.

-add your paste and stir. salt and pepper. not much is needed.

-add your broth, stir and let thicken a bit. then add your diced tomatoes.

-i always sprinkle a little sugar in anything with tomatoes.

-once its cooked for about 10 minutes, add your milk.

-put a lid on it and let cook on low while you boil your pasta. (i used linguine and the boy used rigatoni)

grate a little parmesan on top 😉
