late night binge: browned butter pecan brownies

someone posted this recipe on a food photography community and i was intrigued by the “browned butter” part. it was in the latest bon appetit magazine. i made them tonight…

browned butter cocoa brownies with pecans (adapted from bon appetit)

  • 10 T. unsalted butter
  • 1 1/4 c. sugar
  • 1/2 c. unsweetened cocoa
  • 1/4 dark chocolate cocoa
  • 1/4 t. salt
  • 2 t. brewed coffee
  • 2 chilled eggs
  • 1/3 c. plus 1T. all purpose flour
  • 1/2 c. chopped pecans

melt butter on medium heat, stirring occasionally, until the foaming subsides and bits of dark butter begin to form on the bottom of the pan. take off heat and whisk in sugar, cocoa, salt and coffee until batter is incorporated. let sit for 5 minutes. whisk in eggs one at a time until combined. add flour and whisk until no clumps remain. add your pecans. i forgot so i just mushed them on top before i baked it. i lined a cake pan with a large piece of parchment paper and sprayed it with veggie spray. cook on 325 for 25 minutes. let cool
